The cadence that works
- Monthly: hood, baffles, and overhead — the fire-hazard zone
- Quarterly: behind and under cooking equipment, walk-in gaskets
- Semi-annually: full floor degrease including drains, tile/grout
- As-needed: post-construction or post-inspection remediation
Cadence matters more than intensity. A quarterly deep clean keeps buildup from ever becoming a multi-day remediation project. We document each visit so the restaurant has a defensible maintenance record if the health department asks.
Working around service hours
